Sunlight looks white to us, but it is actually made of 7 different colors mixed together (Red, Orange, Yellow, Green, Blue, Indigo, Violet).
When it rains, the air gets filled with tiny water droplets. When sunlight hits these droplets, they act like tiny glass prisms. They bend the light and separate the white sunlight into its 7 colors.
